Pizza Rossa / pizza with tomato sauce

Our pizza is made with authentic Italian ingredients and baked in a wood-fired oven. It measures about 32 cm in diameter, with dough based on a biga starter that matures for at least 48 hours using only a minimal amount of yeast. We use two types of Italian flour – one for the biga starter and another for the main dough – sourced from traditional Italian mills with generations of heritage.
